Local, Seasonal, Fresh, organic

 

I try my best to eat, local, seasonal, fresh and organic. I also eat a plant based diet for a number of reasons. Here are some of my go to meals that i enjoy and are pretty easy and straight forward to make. Im not one for spending hours in the kitchen, but i do like to enjoy meals made from scratch. Feel free to add meat/fish/cheese to any of these meals to make it your own.

Beets, Pumpkin & Arugula Salad

  • 2 Beets 
  • 1/4 Pumpkin 
  • 1 Cup Basmati Rice & Quinoa blend (Can use any grain)
  • Handful Arugula/Rocket leaves 
  • 1 Avocado 
  • Olive oli, Salt and Pepper 

 

  1. Preheat oven to 375F/190C
  2. Peel and chop beets and pumpkin
  3. In separate dishes, bake the beets/40 mins and pumpkin/25 mins
  4. Boil the rice&quinoa 
  5. Combine beets, pumpkin, rice&quinoa and arugula
  6. Mix with olive oil, salt and pepper
  7. Serve with avocado

Simple Roasted Veggies 

  • 1 Broccoli 
  • 1 Red pepper 
  • 1 Red onion 
  • Handful of mushrooms 
  • 1 Zucchini 
  • Olive oil, Salt & Pepper 

 

  1. Turn oven to 425F/218C
  2. Chop all ingredients and lay into a dish. 
  3. Coat the veggies with Olive oil, Salt and Pepper
  4. Roast veggies for about 30 minutes. 
  5. Enjoy your veggies.

Pumpkin Noodle Salad

  • 1/4 Pumpkin
  • 2 Cucumbers  
  • Handful of Arugula 
  • 1 cup of Mushrooms
  • 4 Oz Rice Noodles (can use any noodles)
  • Dressing 1 Tbs EVOO - Extra Virgin Olive oil 
  • 1 Tbs ACV- Apple Cider Vinegar 
  • 1 Tbs Honey or Agave 
  • 1 Tbs Soy Sauce

 

  1. Preheat oven to 375F/190C
  2. Chop and toss the Pumpkin in EVOO and Honey. Lay on tray and roast until brown for about 30mins
  3. Cook the rice noodles 
  4. With a vegetable peeler, ribbon the cucumbers 
  5. Chop the mushrooms and pan fry them 
  6. Combine mushrooms, cucumber ribbons, noodles and arugula
  7. Add the dressing and mix together
  8. Serve with the roasted pumpkin

Avocado Toast 

 

  •  Sprouted bread
  • 1 ripe Avocado
  • 1 Tomato sliced
  • Handful of Arugula 
  • Himalayan Pink Salt & Pepper 

 

  1. Toast the bread
  2. Smash avocado onto toast
  3. Add sliced tomato 
  4. Add arugula 
  5. Add Salt and Pepper 
  6. Enjoy
